First of all main bottling is done, taddaaa! With help of Lydia we have bottled around 2300 of 75 cl of brut 2022 assemblage 1, all bottled in métode traditionelle blanche/clear bottles. The specific density was 2014 so classic slightly dryer brut is to be expected, mix of Cotentin and Calvados apples a bit like 2020 brut. There is also 220 l of assemblage 1 aging in oak barrel after pommeau with extra 5% (w/v) of honey infusion which should be ready for bottling by end of March or so as micro-cuve assemblage 2.
