First of all main bottling is done, with help of Lydia we have made around 2300 of 75 cl of brut 2022 assemblage 1, all bottled in métode traditionelle blanche/clear bottles. The specific density was 2014 so classic slightly dryer brut is to be expected, mix of Cotentin and Calvados apples a bit like 2020 brut. There is also 220 l of assemblage 1 aging in oak barrel after pommeau with extra 5% (w/v) of honey infusion which should be ready for bottling by end of March or so as micro-cuve assemblage 2.
